1. Culinary Value & Smoke PointA5 Wagyu fat is a "liquid gold" ingredient for high-end kitchens. Due to its high concentration of Oleic Acid, it has a lower melting point than regular beef fat (melting at approximately 20°C). It offers a high smoke point (~200°C), making it the ultimate medium for searing steaks, frying potatoes, or enriching sauces.

2. Product FormatThis is unrendered, raw fat. It is primarily composed of the clean, white fat trimmed from A5-grade subprimals (Ribeye, Striploin, and Chuck). It may contain very minor traces of lean meat, which adds deep umami flavor when rendered into tallow.

3. Usage Instructions

  • Rendering (Tallow): Cut into small cubes and melt over low heat to produce clear, aromatic Wagyu tallow.

  • Flavor Booster: Use small amounts to sauté vegetables, fry rice, or as a base for premium ramen broths.

  • Bakery: Can be used in savory pastry crusts or biscuits for a distinct, buttery richness.

4. Storage & Shelf LifeGiven the high unsaturated fat content, A5 fat can oxidize faster than standard beef fat if exposed to air. We recommend keeping the block frozen at -18°C. Once thawed, it should be rendered or used within 3–5 days for optimal fragrance and flavor.

5. Weight & BillingAs these are natural wholesale blocks, the weight typically ranges around 8kg. Final billing will be based on the actual weight of the block dispatched.
