1. Slicing OptionsThis item is available in two formats only:

• Whole: Sold as a complete 8-bone rack.

• Sliced per Bone: Cut into individual chops (8 pieces total). We do not provide custom thickness slicing or any other portioning styles for this cut.

2. Weight & Slicing Loss (Meat Dust)All orders are invoiced based on the Gross Weight (original weight of the whole block) before slicing. Please note that mechanical slicing naturally creates "meat dust" or "sawdust loss." The final weight of the sliced meat will be slightly less than the original block weight due to this inevitable process.

3. End Tips & ShapingWhen you order a whole muscle for slicing, you will receive the entire cut, including the "end tips" or "tails." Because these are natural whole muscles, the end pieces will be irregular in shape and size compared to the center-cut slices. We do not discard these as they are part of the total weight paid for.

4. Fat Content & MarblingAs these are natural products, fat distribution and marbling vary throughout the muscle. While we provide premium grades, we cannot guarantee 100% uniformity in fat-to-meat ratios from the "head" to the "tail" of the cut.

5. Final Sale PolicyOnce a whole block has been sliced according to your instructions, the order is final. We cannot accept returns or exchanges on custom-cut meat.
