How to Make Cauliflower Egg Fried Rice: The Simple, Low Carb Alternative to Rice.

It is known that cauliflower and broccoli rice are excellent low-carb alternatives to rice. Not much different to cooked rice - in the most important aspects of flavour, texture and appearance; but it has only a fraction of the calories and carbs, which also provides a lot of useful nutrients and fibres.


Why is cauliflower rice a good option for you?

Why is it better for you to switch your normal rice to Caurys' Riced Cauliflower & Broccoli? Can it be mixed into pasta and other dishes? Can I cook Caurys’ Rice the same as rice? Can I use Caurys’ Rice in place of rice and serve it?  

The following is a simplified recipe for Caurys' Riced Cauliflower and it is a great alternative to take with you when you travel or keep in your cupboard and never miss a chance to make your lunch or dinner!


Caurys’ Organic Riced Cauliflower Egg Fried Rice.

There are so many different recipes, but here’s our take on switching this classic to healthier alternatives. 

INGREDIENTS

  • 1 pack of Caurys’ Riced Cauliflower (500g) 

  • 2 tablespoons sunflower oil

  • 3 eggs

  • 6 scallions, chopped 

  • 2 cloves of garlic, finely chopped

  • 1 red pepper, finely chopped

  • 1 large carrot, coarsely grated 

  • 100g frozen peas

  • 2 tablespoons soy sauce

  • 1 tablespoon sweet chilli sauce

  • 1 tablespoon toasted sesame oil

METHOD

  1. Heat Caurys’ Riced Cauliflower and set aside.

  2. Break the eggs into a bowl and whisk with a fork. 

  3. Heat 1 tablespoon of sunflower oil in a high sided pan or a wok on a medium heat, add the egg, swirling to allow it to spread and cook quickly until just firm and slide it onto a plate

  4. Add the remaining sunflower oil and fry 2/3 of the scallions, garlic, red pepper, grated carrot and peas for 2 minutes. 

  5. Add in the soy sauce, sweet chilli sauce and sesame oil, mix through and cook for another 2 minutes. 

  6. Add in the Caurys’ Riced Cauliflower and continue to cook for another 3-4 minutes. 

  7. Chop up the cooked egg and add to the pan to reheat in the mixture.

  8. Finally garnish with the remaining 1/3 scallions.

Make it fancy, add a handful of frozen prawns to the mix while cooking and top with some chopped toasted cashew nuts.

Here’s a quick tip how to prepare Caurys’ Riced Cauliflower & Broccoli:

  • Microwave for 4 - 5 minutes. 

  • Heat a little oil in medium to high, pan-fry for 3 minutes until tender. 

  • Bake in the oven for 10 - 12 minutes - spread Caurys’rice on a greased baking sheet, roast at 200℃ until tender.
